We had an excellent harvest this year, so there is plenty of wild rice available. Our rice is hand-harvested in lakes and rivers of Northern Minnesota and wood fire parched. Harvesting and parching rice in this manner follows traditional methods of "ricing," allowing for what many of our customers say is the best wild rice they've ever had--a wonderful smokey flavor and fast cooking time. Because of its high protein content and unlimited storing ability, wild rice was an important source of food for the native people in this area. Harvesting wild rice is truly a passion of ours here at The Wild Institute, heck, it's canoeing and gardening combined, it doesn't get any better than that. Know that the rice you order from us was harvested and parched amidst much laughter, beautiful (and not so beautiful) fall days in the north country, silly made-up songs, sore backs, chocolate, long days, patient partners, and most of all, love.
